Ingredients (Serves 2):

✅ 4 eggs, whites separated
✅ 2 tbsp grated Parmesan
✅ 1 tsp lemon zest
✅ 2 tbsp butter
✅ 1 tbsp chopped chives
✅ 100g smoked salmon
✅ Salt & pepper to taste

Method:

1️⃣ Preheat oven to 180°C. Whip egg whites to stiff peaks, then gently fold in Parmesan and lemon zest.
2️⃣ Spoon onto a baking sheet, creating small 'nests,' and bake for 3 minutes.
3️⃣ Carefully place an egg yolk in each nest and bake for another 3 minutes until just set.
4️⃣ Melt butter with chives, drizzle over the eggs, and serve with smoked salmon on the side.

Method:
