But what exactly are smash burgers, and where did they come from? 

 

What is a Smash Burger?

A smash burger is a type of hamburger made by ‘smashing’ a ball of ground beef onto a hot, flat-top grill or griddle. This technique creates a burger with a unique, crispy crust on the outside while keeping the inside juicy and flavourful

The key to a great smash burger is the high heat, which causes a reaction between the amino acids and sugars in the meat, giving it a browned, distinctive flavour. 

 

Where Did Smash Burgers Come From?

The smash burger concept dates back to classic American diners in the 1950s, where burgers were often made by quickly pressing them flat with a spatula. This process not only sped up cooking but also maximised the burger’s surface area for better caramelisation.

How to Cook JJ Smash Burger Pucks

Prior to cooking, remove the burger pucks from the freezer and thaw in the fridge for 24 hours.

  1. Preheat the Griddle: Heat your griddle or flat-top grill to high (around 200°C). It’s crucial to have a hot cooking surface to achieve that perfect crispy crust!
  2. Smash the Puck: Place a puck onto the hot griddle. Use a burger press or sturdy spatula to press the puck down firmly. Hold for around 10 seconds to ensure the patty is evenly flattened and seared.
  3. Season and Cook: Season the patty with salt and pepper if desired. Let it cook for 2-3 minutes until the edges are crispy and browned.
  4. Flip and Finish: Carefully flip the patty and cook for another 1-2 minutes on the other side. During the last minute, place a slice of cheese on top of the patty and allow it to melt.
  5. Toast the Buns: Toast your buns – we suggest brioche buns for the perfect pairing!
  6. Assemble the Burger: Place the cooked patty on the bottom bun. Add your favourite toppings like fresh lettuce, tomato slices, onions, and pickles. Finish with your choice of condiments, then top with the other half of the bun.
  7. Serve: We recommend pairing your smash burger with crispy chips, sweet potato fries, onion rings or fresh salad.
